Antigua is rich
in indigenous dishes. There is an abundance of fresh fish dishes,
but many national favourites are based on salt fish, a white fish
preserved by salting and drying.
Fungi, pepperpot, ducouna,
and dumplings are other favourites. Fungi is a dish of cornmeal
and okra. Pepperpot is a dish made with hot peppers. Ducouna is
a dish made from sweet potatoes and white flour.
