Kimch'i
Kimch'i is the most famous Korean food. A fermented vegetable dish highly seasoned with red pepper and garlic, it is served at virtually all meals, and has become the best known of Korea's dishes abroad.

Abalone Gruel

Abalone Gruel
Minced abalone is roasted with sesame oil in a pan and rice and water are added. After cooking slowly, salt is added to taste. This gruel is a specialty of Cheju and was much favoured by Kings, in ancient times as health food.


Chari mulhoe (Raw Fish)
The "Chari" is a small, dark in color fish from the bream family. Deboned and cut into pieces, scallion, dropwort, cucumber and other vegetables are added and spiced with pepper. Ice cold water is then added at serving time.

Shiitake Mushrooms cooked with Rice in Stone Pot
Pollution-free natural or cultivated Shiitake mushrooms from Halla mountain at the level of 600 to 700 meter are selected for cooking with rice in a Stone Pot. Carrots, spinach and various edible wild greens as well as minced beef are added to the pot. When cooked, all ingredients are well mixed in the pot for serving. The scent of Shiitake on top of local flavor makes this also a speciality of Cheju.

Fresh vegetables are added on top of various shell fish such as clams, top shells, oysters and sea urchins plus soyabean paste to improve taste.
