Fava Bean
The bean comes in a large pod that, unless very young, is
inedible. Fava beans can be purchased dried, cooked in cans
and fresh. Fava beans have very tough skin, which should be
removed by blanching before cooking. It can be cooked in a
variety of ways and are often used in soups. Also called faba
bean, broad bean and horse bean.

San Dab
A small flatfish found in the island waters. Has a sweet,
delicately moist flesh that's quite low in fat. Sand dabs
are marketed whole and usually range from 4 to 12 ounces.
They can be prepared by almost any cooking method including
baking, broiling, poaching and sauteing.

Cod
This popular saltwater fish can range from 1 1/2 to 100 pounds
and comes from the Pacific Oceans. Cod's mild-flavored meat
is white, lean and firm. Cod can be baked, poached, braised,
broiled and fried. Whole cod are often stuffed before baking.
Cod can be preserved by smoking, salting or drying. Cod cheeks
and tongues are considered a delicacy.
